
Barbari Bread

Gorgeous Barbari bread, I love eating this hot from the oven. It's such a quick and easy bread to make, unlike other breads this has a very short proofing time, so you can literally get this from making to baking and on the table in just over an hour.
Ingredients
For the bread
7g dry yeast
1tsp white granulated sugar
2 cups water
4 1/4 cups strong white bread flour
2 tsp salt
For the glaze 1 tsp flour
1/2 cup cold water
1 tsp baking soda
For the garnish
nigella seeds (sprinkle on top of the bread before you put in the oven)
Method
Step 1
Place the flour in a bowl
Add the salt and mix together
Step 2
Place the yeast in a separate bowl
Add the granulated sugar
Add 1 cup luke warm water
Cover the top and leave for 10 mins until the yeast has become activated and is frothy
Step 3
Pour the yeast mixture over the flour
Fold into the flour and knead
Pour the 1 cup of water and continue folding until all the flour and water bind
Note: This dough is very sticky and should be that way so do not add extra flour
Step 4
Once the flour has been kneaded cover the top of the bowl with cling film
Set aside for 30 minutes until your dough has doubled in size
Step 5
For the glaze
Add 1/2 cup cold water into a small saucepan
Add the flour and mix until diluted with no lumps
Add the baking soda and mix well
Place the saucepan over medium heat
Continue stirring until the mixture thickens slightly
Remove from the heat and allow to cool and thicken more
Step 6
With proofing complete cut your dough into three or four pieces depending on how big or small you want your Barbari to turn out.

Flour your surface and make the dough into an oval shape ( typical Barbari shape)
Spread a thin layer of the glaze over the bread and using the back of a spoon spread the dough out further
With the spoon or your finger make deep lines from the top to the bottom of the dough
Sprinkle nigella seeds over the dough (you could also use sesame seeds)

Step 7
Place your dough in the oven at 250 °C for 10 minutes
Remove from the oven and allow to cool
Enjoy for breakfast, lunch or dinner. Noosh-e-Jaan :)
