
Boiled Beetroot with Hogweed

This really takes me back, what a wonderful warm and cosy feeling eating this warm on a cold evening.
I remember having this with friends as we stopped by on the way to Karaj, a town literally stuck to Tehran now! There was snow on the ground and we stopped the car to grab a bite to eat and rest our legs.
There were small carts parked by the road side and both men and women selling barbecued corn on the cob, boiled broad beans in vinegar and boiled beetroot to list a few.
We bought a bit of everything and munched away at these warm comforting delights.
Ingredients
For the Beetroot
4/5 medium sized beetroots
1tsp salt
1/4 tsp ground black pepper
1 cup water
For the garnish
1 tsp ground hogweed
Method
For the beetroot
Step 1
Peel the beetroots.
Place in a pan and add the water
Add the salt and pepper
Put the pan on medium heat and allow the beetroot to boil for 30 minutes or until a fork / knife can easily go through it.
Remove from the heat
For the garnish
Step 2
Add the hogweed and place the lid of the pan back
Allow the hogweed to infuse in the beetroot and it's juice for 10 minutes
