Nokhodchi - Chick Pea Roses

Nan-e-Nokhodchi, commonly known as Nokhodchi is an irresistible cookie.

Out of any sweet that I've made, seen or eaten, Nokhodchi tops the bill for me! Now there is a similar cookie I've made earlier and also blogged about, called Heavens Roses - Golhaye Behesht which is made in a similar way to Nokhodchi, so if you don't fancy chickpea flour you can make the alternative with Heavens Roses.


I've now hidden these away until Shab-e-Yalda or else my bunch would devour them in minutes! The only thing is .... I've got to hide them from myself too!


This cookie ticks the vegetarian and vegan box perfectly.


Ingredients

100g chick pea flour (besan)

100g confectioners sugar

60g / 65g oil (vegetable)

11/2 tsp ground cardamom


For the garnish

2 tbsp ground pistachio

2 tbsp ground rose petals

1 tsp ground cardamom


Note: Oven 150°C or Gas Mark 2 for 15 / 20 minutes


Method

Step 1

  • Add the chick pea flour (known as Besan flour) confectioners sugar and cardamom to a large mixing bowl

Note: I've used Chick pea flour here, however the best results are with Garbanzo flour which is Besan but much lighter. Due to lock down I've not been able to get my hands on this! but recommend you use it if you can.

  • Add the oil and mix until all the dry ingredients and the oil bind to make a semi dry dough

  • Place in a plastic bag and set aside for an hour to rest

Step 2

  • Remove from the plastic bag

  • Make into flower shapes using cookie cutters

Note: if you don't have the flower cookie cutter just cut your cookies into round shapes 2 cm in height

  • Place on a baking try

  • Place in the oven at 150°C or Gas Mark 2 for 15 / 20 minutes

Step 3

  • Remove from the oven and allow to totally cool down


For the garnish

Sprinkle the ground pistachios, rose petals and ground cardamom over the Nokhodchi.


Enjoy with lovely Persian tea. Warning!! you can get seriously hooked on these ;) well at least till they're finished, then you'll have to make some more :)
